  11. Añadir de nuevo el jamón y mezclar.
  12. En un bol, poner la mezcla de las berenjenas y la del pan con la leche (estrujado, o sea, ni gota si es posible).
  13. Para que no estén blandas y puedas dar forma de albóndiga añadir el pan rallado (controlando la cantidad, para ello, viertes el pan rallado, amasas y compruebas la textura).
  14. Pon los toques de pimienta (+sal) y remover hasta que lo tengas homogéneo.
  15. Hacer las albóndigas, batir los huevos y poner aceite a una sartén.
  16. Pasar cada albóndiga por los huevos y a la sartén.
  17. Dorar las albóndigas por las dos caras. (se frien pronto, no las tengas demasiado tiempo)
  18. Sacarlas de la sartén y dejarlas en un plato con papel para que absorba el aceite sobrante.
  19. Las puedes emplatar decoradas con una ramita de perejil
