- Pasado este tiempo, sacamos la carne de la nevera y preparamos un plato con un pelín de harina. La harina la frotamos en nuestras manos, así nos será más fácil bolear la carne, si no, se nos pegará. NO pasar la carne por harina.
- Cuando esté bien caliente a fuego alto, echamos las albóndigas y doramos por fuera, pero que quede la carne rosada por los laterales. Calculad 5-7 minutos máximo. Reservamos.
- Cuando tengamos las albóndigas boleadas al tamaño que queramos, ponemos una sartén (yo uso 24 cm de diámetro para unas 14 albóndigas) con un chorro de aceite de oliva y calentamos.
- Ahora una de dos, o media pastilla de caldo de carne o el caldo de carne directamente.Total 180 ml (si es con pastilla, esa cantidad será de agua). Dejamos hervir 2 o 3 minutos dando vueltas a la sartén, y echamos las albóndigas reservadas.Lo dejamos a fuego mínimo.
- En esa misma sartén ponemos una cebolla en juliana si es grande media bastará. Bajamos el fuego y pochamos, cuando empiece a transparentar, añadimos vermut rojo unos 33 cl (vaso tamaño normal) ponemos el fuego al máximo 3 min.
- A fuego mínimo, con las albóndigas incorporadas, dejaremos que hierva toda la mezcla girando la sartén, para ligar la salsa con la carne durante unos 6-8 minutos, si os gusta la carne menos hecha, unos 10-12 si os gusta más densa.Y a servir!!!
- APUNTE : Si os gusta la salsa más densa, cuando tengáis la cebolla salteada, incorporad una cuchara de café de maicena y pegar un fogonazo antes de añadir los líquidos.
