Tengo unos amigos que son cocineros, y hace muchos años, en el restaurante que trabajaban probé las albóndigas con salsa de chocolate.   3. Pelar y trocear en trocitos las cebollas, zanahorias y puerro.
  4. En el mismo aceite de freír las albóndigas, pochar la cebolla, añadir la zanahoria y el puerro (salpimentar al gusto) y dejar pochar unos minutos.
  5. Añadir un vaso de vino tinto y 2 vasos de caldo de pollo, remover y añadir las albóndigas. Si no cubre añadir caldo hasta cubrir y llevar a ebullición.
  6. Tras unos 15-20 min reduciendo, sacar las albóndigas, añadir dos cucharadas de café colmadas de cacao puro 100% o dos onzas de chocolate negro. Remover bien para que no se hagan grumos y pasar por la batidora hasta que la consistencia sea homogénea.
  7. Añadir las albóndigas a la salsa y remover un par de minutos para que esta acabe de coger cuerpo y se caliente la carne.
  8. A mí personalmente, me gustan mucho más con un toque de canela. Vas probando hasta que la salsa esté a tu gusto. Yo le pongo de canela un par de toquecitos del bote y queda riquísima. Queda genial con arroz basmati blanco de acompañamiento.
