  5. Hacemos bolas de 50 gramos (o más grandes o más pequeñas, depende de vuestro gusto), las enharinamos y las freímos en abundante aceite. Reservamos las albóndigas fritas.
  6. Para hacer la salsa ponemos en una olla bien amplia 50 gramos de aceite de oliva virgen extra, dos dientes de ajo picados, una cebollas roja gorda bien picadas, un puerro y una zanahorias, todo bien picado fino.

    Rehogamos despacio hasta que se quede bien, bien dorado, casi parecerá una mermelada. Añadimos una cucharadita de pimentón dulce y damos una vuelta, ponemos justo después un 1/2 vaso de vino blanco y dejamos que se reduzca.
  7. Trituramos 4 tomates pera, y lo añadimos a la salsa. Dejamos que hierva 2 minutos.
  8. Ponemos las albóndigas en la salsa y añadimos dos hojas de laurel y una de tomillo. Dejamos cocer 40 minutos tapado a fuego muy suave.

    Moveremos de vez en cuando la olla pero evitaremos en lo posible meter una cuchara dentro para mover, se pueden romper las albóndigas.
